
So, banana nut bread.
It’s kind of like a grandma hug, but baked in a tin. Or a big fluffy blanket, but woven with sugar.
This recipe is super easy. Like Sunday morning. Duh.

One of banana bread’s most redeeming qualities is that you are essentially taking rotting fruit and making something delicious out of it. Not really a flattering portrayal in and of itself, but I’m a big fan of not wasting materials so I have no qualms here. It also happens to be highly customizable and a snap to whip up, so you really have to be trying in order to fail.
A variation of chocolate chips in place of nuts has children and those with nut allergies rejoicing. You could also try butterscotch chips or shredded coconut. Even a different type of nut, such as pecans, would compliment nicely. Use your imagination here and feel free to get the little ones in on this recipe.

Ingredients
- 9 oz bread flour

- 4 oz brown sugar

- 4 oz granulated sugar

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1 Tbsp cinnamon

- 1 tsp salt

- 8 oz chopped walnuts, split into 6 oz and 2 oz

- 3 extra-ripe bananas, mashed

- 2 eggs

- 2 oz water
-
- 2 tsp vanilla extract

- 6 fluid oz oil
Instructions
- Preheat to 350
- Turn on your scale and place the bowl on it. Zero out the weight of the bowl. Weigh out the bread flour. To the flour add the baking powder, baking soda, salt, and cinnamon. Whisk all the dry ingredients to combine. Set aside.
- In a separate bowl, blend mashed bananas and eggs together. Place the bowl on the scale and zero out the weight. Weigh out both types of sugar. Add vanilla. Blend sugars and vanilla in with the banana mixture. Pour in the oil and mix.
- Create a well in the middle of the dry ingredients and place the banana mixture and 2 oz of water into the well. Mix together until it forms a cohesive batter and no longer. If there are some streaks of flour in the batter this is ok, since you want to avoid over mixing.
- Fold in 6 oz of the walnuts into the batter. Pour the batter into your pan and top with the remaining 2 oz of walnuts. Bake at 350 for about a hour. Allow bread to cool before slicing.
