Double Chocolate Chip Cookies

These cookies are small and unassuming, but they’re going places.

Places like Afghanistan. Leavin’ on a jet plane these cookies are. I’ve never even been on a plane.

Hopefully, in a few weeks, these cookies will make it into the hands of a soldier who needs them. Which is pretty much any soldier. All soldiers need cookies.

Soldiers also need things like crossword puzzles and toothpaste and trail mix and magazines, newspapers, baby wipes, deodorant, pictures, movies, phone cards, and much more. There’s a lot of downtime when you are overseas. That turns into a lot of time to think about where you are vs. where you’d like to be (home) and wondering what your friends/family/coworkers are doing. Amusements and snacks from home alleviate some of the angst while you are stuck in a foreign land.

I’ve never sent a care package before, but I was inspired to do so after reading a letter from a fellow employee that got deployed. I know nothing can replace the feeling of being home with your loved ones, but I hope these cookies let somebody know that we’re reaching out to them.

Double Chocolate Chip Cookies

Yield: about 3 dozen

Ingredients

  • 6 oz light brown sugar
  • 6 oz granulated sugar
  • 8 oz unsalted butter, room temp
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 tsp vinegar, cider or white
  • 1 tsp baking soda
  • 1 large egg
  • 9 oz bread flour
  • 1.5 oz cocoa powder
  • 10 oz dark or semi sweet morsels
  • adapted from King Arthur Flour

Instructions

  1. Preheat to 375
  2. Turn on your scale and place a mixing bowl on it. Zero out the weight of the bowl. Weigh out out both sugars, then add the butter. Mix on medium speed until light in color and fluffy looking, about 3-5 minutes. Add vanilla extract, salt, and vinegar. Scrape down the bowl, then add the egg. Mix well.
  3. In another mixing bowl, weigh out bread flour and cocoa. To that add the baking soda. Whisk ingredients together. Add the flour mixture to the wet mixture, about 1/2 cup at a time, on low speed. If you dump it all in and turn the mixer on you'll end up wearing it. Ask me how I know this.
  4. Once the dough has formed add the chocolate chips, mixing on low speed. If you have time, cover the dough with plastic wrap and place in the fridge overnight. Portion out the dough with a scoop or two teaspoons, leaving a couple inches between each cookie. Bake for 10-12 minutes and cool on a wire rack. This is an excellent cookie to go with milk.
