Ultimate Brownies

Apparently when I don’t want to do anything, I make brownies. I had dishes in the sink and laundry in the baskets, but all I did was make brownies. Oh, I did shovel some snow…but I definitely did not do my math homework. Procrastination is totally not my style, usually, but this particular day was full of blind eye turning.

After feeling a little guilty about doing nothing except baking, I decided that these brownies needed a purpose. Not that brownies need a reason to exist; it’s just that I had to find an explanation to resolve my guilt.

So off they went to my mom’s house, where her and her friend can nosh on them after moving a washer and dryer into my place. You’re not being lazy if you’re baking things for others, right? Of course not. Especially not after those folks wrestled clothes washing appliances into your wee apartment complex. After all that, baking is just good social graces. Guilt (and brownies) gone.

Ultimate Brownies

Ingredients

  • adapted from Martha Stewart
  • 4 oz unsalted butter
  • 8 oz bittersweet or semisweet chocolate
  • 5 oz granulated sugar
  • 5 oz light brown sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 3 oz bread flour
  • 1/2 tsp salt
  • 1 tsp espresso powder (optional)

Instructions

  1. Preheat to 350
  2. Turn on your scale and put a plate on it, then zero out the weight of the plate. Weigh out each of the sugars and place into a large mixing bowl with the four eggs and the salt. Mix ingredients until combine. Weigh out the flour and set it aside.
  3. On the stovetop, set up a double boiler or a heatproof bowl on top of a saucepan with water in it. Place butter and chocolate into the upper bowl and turn on the heat. Once the butter and chocolate are almost completely melted, add the espresso powder (if using) and the vanilla extract and stir to combine. Take off heat and allow to cool for 10 minutes.
  4. Add chocolate mixture to the sugar mixture and combine throughly. Then add the flour slowly, mixing on low, until all ingredients are combined. Pour batter into a greased 9x9 baking dish. Bake for 40-45 minutes. Cut when completely cool.
